About This Course

The Barista & Coffee Making course at R.R. Star is a hands-on vocational program that trains students to work professionally behind a café counter — from pulling the perfect espresso shot to crafting latte art and managing a busy service station.

Nepal's café and restaurant industry is growing rapidly in cities and tourist areas, and skilled baristas are in high demand. This course also opens doors to hotel food & beverage departments, airline catering, and overseas hospitality employment.

What You Will Learn

By the end of this course, you will be able to:

  • Operate a commercial espresso machine and grinder confidently
  • Prepare a full range of espresso-based drinks (espresso, americano, cappuccino, latte, flat white, mocha)
  • Steam milk to the correct texture and temperature for each drink
  • Perform basic latte art (heart, rosette)
  • Brew drip, French press, V60, and cold brew coffee
  • Maintain and clean equipment to food safety standards
  • Understand coffee origins, roast levels, and flavour profiles
  • Provide professional customer service in a café environment

Course Curriculum

Month 1 — Coffee Foundations

  • History and origin of coffee — from farm to cup
  • Varieties: Arabica vs Robusta, roast levels (light, medium, dark)
  • The espresso machine: parts, functions, and operation
  • Grinder calibration and dose control
  • Extraction basics: time, pressure, yield, and flavour

Month 2 — Milk, Menus & Practical Skills

  • Milk steaming: temperature, texture, and microfoam technique
  • Espresso drinks: americano, macchiato, cappuccino, flat white
  • Milk-based drinks: latte, mocha, cortado
  • Alternate brewing methods: French press, V60, Aeropress, cold brew
  • Menu planning: coffee, tea, and non-coffee beverages
  • Workflow and bar management during service

Month 3 — Latte Art, Food Safety & Service

  • Latte art: free pour techniques (heart, tulip, rosette)
  • Hygiene and food safety regulations (HACCP basics)
  • Equipment cleaning and maintenance schedule
  • POS system and order management
  • Customer communication and handling complaints
  • Final practical assessment (bar service simulation)
